Your Crockpot or Slow Cooker Is Good For a Wide Variety of Dishes

Your slow cooker is good for a wide variety of dishes and should be a kitchen helper you use often, especially if you are a busy cook and who isn’t!  The recipes below are wide-ranging so check them out and see what you want to add to your crockpot or slow cooker recipe files!

1 pkg (12-oz) frozen shrimp, thawed
1/2 cup chicken broth
1 garlic clove, minced
1 tsp chili powder
1/2 tsp salt
1/2 tsp dried oregano
1 cup frozen peas
1/2 cup diced tomatoes
2 cups long-grain rice, cooked

In a 4 1/2-quart crockpot or slow cooker, combine the shrimp, broth, garlic, chili powder, salt, and oregano.  Place lid on cooker and cook on low setting for 2 hours.

Add peas and tomatoes; replace cover and cook on low 5 to 10 minutes.  Stir in the cooked rice.  Replace cover and cook on low for 5 minutes or until the rice is heated through.

Yield: 4 servings

1 lb lean ground beef
1 lb Italian sausage
1 lb Velveeta or similar cheese product

Turn cooker on low setting.

In a large skillet combine the ground beef and Italian Sausage, brown, stirring to break up; drain well in a colander.

Into a large microwave safe bowl, cube the cheese; add the drained meat.  Microwave on high for two minutes.  Stir well to melt all the cheese and blend the mixture.

Pour the mixture into the crockpot or slow cooker that is being preheated to keep warm for serving.

Serve with corn chips, tortilla chips, fresh veggies, etc.
